What is not to love about creamy, blended oatmeal with a a layer of slightly salted peanuts and a creamy chocolate “ganache” topping? Because that’s exactly what these snickers style ganache overnight oats are in a nutshell.
Admittedly, I wasn’t too much into all these candy bars classics- they were just too sweet for my taste. But OBVIOUSLY, if I would get offered some, I wouldn’t have said no. However if I had to choose one from these party mixes with tiny versions of the chocolates, it definitely wouldn’t have been snickers. I was more into Twix. Or bounty. Maybe Milky Way, because I liked the stars on the package.

Ingredients you need
You can make these snickers style ganache overnight oats in two ways: one where you blend the dates into the oat-yoghurt base and another where you make an extra “caramel” date layer. However, the ingredients stay the same for both recipes and they are sweetened with dates only:
- OATS: You can use gluten free ones of course, if you need to make it gluten free!
- CREAMY YOGHURT: The creamier, the better! I would recommend you to opt for a greek- or skyr-style variety. My favorite one to use for this recipe is a greek style soy yoghurt, but any yoghurt with a thicker consistency will work!
- FLAX SEEDS: to create an even thicker oat-yoghurt base!
- VANILLA OR CARAMEL PLANT PROTEIN: This is totally OPTIONAL. But great for adding some extra flavor to the base or packing in a good dose of extra protein, especially if you use a yoghurt that isn’t rich in protein.
- DATES: It is best if you soak the dates for both versions to help your blender. However:
- FOR VERSION 1 you can use any variety you have on hand, INCLUDING DEGLET NOIR. They do not work well for version 2 as they tend to stay a bit harder, even after soaking and therefore wouldn’t resolve in a creamy paste when mashing with a fork!
- FOR VERSION 2 (Extra date “caramel” layer) I would ONLY recommend really soft and squishy dates, like MEDJOOL or DERI ones.
- PEANUTS: After all, these overnight oats are inspired by the famous candy bar, so peanuts play a major role 😉
- RAW CACAO POWDER: For the “ganache” topping. By raw I mean 100% cacao powder, not COCOA powder you would use for making instant hot chocolates.
- MAPLE SYRUP: Because just raw cacao powder and plant milk wouldn’t do the trick.
- PLANT MILK: To create a creamy, delicious chocolate “ganache” topping!
Snickers style ganache overnight oats: 2 WAYS
The first time I made them, I blended the dates into the overnight oat base. But I thought it would also be fun to resemble the candy bar by having an extra “caramel” layer. Even though both versions are DELICIOUS, the second one is probably my favorite. They take around 15 minutes to prepare and need to rest in the fridge for at least 4 hours (therefore “overnight” oats :))
So now, you can decide which version sounds best to you and easier for you to prepare as I will share 2 ways to make these snickers ganache overnight oats:
VERSION 1: dates blended into oat-yoghurt base
- As I already mentioned it’s best to soak the dates for both versions for around 10 minutes in hot water.
- Meanwhile we need to add the oats and yoghurt into a high speed blender and blend until smooth.
- Then we add the dates and flaxseeds as well (and the protein powder if you use it) and blend for a further minute. It will get a little more difficult for the blender to keep going and it might be necessary to stop and scrape down the sides. Once smooth and creamy, we transfer the mixture to a jar.
- To make the ganache layer, all we need to do is stir together the cacao powder, plant milk and maple syrup until the cacao is fully dissolved and we reach a creamy consistency.
- The last step is layering the peanuts onto the oat base, then pour the chocolate ganache on top and let everything sit in the fridge overnight.
- Ohh, now the last last step of course is to ENJOY your snickers inspired breakfast parfait!
VERSION 2: extra date “caramel” layer
- Important step, here as well: soak the dates for 10 minutes in hot water!
- The next step is very similar to version one, except that we do NOT blend the dates with the base: We add the oats and yoghurt into our high speed blender and blend them for around a minute until completely smooth. However, Version 2 is perfect if you don’t have a blender! You can just mix the oats or oatflour/ very fine it’s with the yoghurt and flaxseeds without blending them.
- Then the flax seeds go into the blender too, we blend everything again and transfer the mixture to a jar.
- To make the “caramel” layer we drain the dates and RESERVE 4 Tbsp of the soaking water and start mashing them into a creamy paste with 3 Tbsp of the water. If the paste is too thick, just add the remaining Tbsp.
- From here on we proceed pretty much the same as with version 1: we make the chocolate ganache by stirring together the cacao powder, plant milk and maple syrup until the cacao is fully dissolved and the consistency is smooth and creamy.
- Layer the date paste on top of the oat-yoghurt blend, top with the peanuts and pour the cacao mixture on top. I knowwwww, waiting is probably the hardest part, but the last thing we need to do is letting the jar sit in the fridge overnight. And FINALLY: ENJOY!
Substitutions
You can make the following swaps:
- FLAX SEEDS – Instead of flax seeds, you can use chia seeds.
- MAPLE SYRUP – You can definitely use any other liquid sweetener you have on hand, like coconut blossom syrup or rice syrup. If you are not 100% vegan, honey would work too. It is completely up to you!
How to store the snickers style ganache overnight oats
You can store these snickers style ganache overnight oats in the fridge with the lid on for 2-3 days. They are perfect as “make-ahead” breakfast when you are in a rush or you do not want to spend too much time in the mornings cooking.

- 1/2 Cup (50-60g) rolled oats *
- 200 g creamy yoghurt (I used a greek style soy one, but a any creamier yoghurt variety will work!)
- 1 Tbsp flax seeds
- 1 Tbsp vanilla or caramel plant protein powder (optional)**
- 2-3 dates, pitted ***see notes for recommended sorts
- small handful roasted and lightly salted peanuts crushed
- 2 Tbsp raw cacao powder
- 1/2-1 Tbsp maple syrup ****
- 2-3 Tbsp plant milk
Instructions
VERSION 1: DATES BLENDED INTO OAT-YOGHURT BASE
- If your dates are very hard, soak them for 10 minutes.
- Meanwhile add the oats and yoghurt into a high speed blender. Blend for around a minute until completely smooth.
- Then add the dates and flaxseeds (and protein powder if using) and blend for a further minute. It will get a little more difficult for your blender to keep mixing and you might need to stop and scrape down the sides. Transfer the mixture into a jar.
- Stir together the cacao powder, plant milk and maple syrup until the cacao is fully dissolved and you reach a creamy consistency.
- Top the oat-yoghurt-date blend with the peanuts, then pour the cacao layer on top. Let the jar sit in the fridge overnight and enjoy in the morning!

VERSION 2: EXTRA DATE "CARAMEL" LAYER *****
- Soak the dates for 10 minutes.
- Meanwhile add the oats and yoghurt into a high speed blender. Blend for around a minute until completely smooth.
- Then add the flaxseeds (and protein powder if using) and blend for a further minute. It will get a little more difficult for your blender to keep mixing and you might need to stop and scrape down the sides. Transfer the mixture into a jar.
- Drain the dates and RESERVE 4 Tbsp of the soaking water.
- Using a fork, mash the dates with 3 Tbsp of the water until a creamy paste forms. If the paste is too thick, add the remaining Tbsp.
- Stir together the cacao powder, plant milk and maple syrup until the cacao is fully dissolved and you reach a creamy consistency.
- Layer the date paste on top of the oat-yoghurt blend, top with the peanuts and pour the cacao mixture on top. Let the jar sit in the fridge overnight and enjoy in the morning!
