Vegan apple cheesecake bars

Fall is not only the start of lots of rainy and windy days and the sunrays disappearing earlier. It is also the season of pumpkins and apples! These vegan apple cheesecake bars come with a vegan cinnamon streusel topping and are a great way to celebrate the time of cozy blankets and warming spices.

So, finally, it is September and fall is officially beginning in a few days. To be honest, I love summer, I love the long days and how early the sun rises. I love the warm weather, the time spent outside, swimming in a lake, sea or ocean. The flowers blooming, catching every sunray, people gathering together to enjoy a warm summer night with lots of good food and the simplicity of each others company.

But as much as summer has its beauty, so does fall. To me, this seasons is the start of cozy blankets, hot showers or baths after rainy walks, leaves changing their colour into a warm orange-red, hot chocolates (with marshmallows! or whipped cream! or both?!)…ohhhh, and I will finally get to buy me a pair of rain boots! (I have always dreamt of having red or yellow ones)

Anyways, fall perfectly embodies coziness. And this vegan apple cheesecake with streusel topping surely helps to enhance that feeling! Where I live, there are nearly almost two options of baked goods available at every older Cafe: apple or curd pie. So I thought: Why not combine these two flavours and give it a little twist? Thought, done. And here it is: my VEGAN VERSION OF AN APPLE CHEESECAKE.

I was really surpised how GOOD it turned out. The dates in the filling add a nice caramely flavour and the cinnamon brings all the fall vibes. This version of a cheesecake is almost only fruit-sweetended, except that bit of coconut sugar in the Streusel topping. Oh, and it can be made gluten free too.

So what are you waiting for, now that you don’t have an excuse to not start baking (except if you have a nut allergy maybe or are allergic to apples?). The only thing that could stand in your way is the blending step, but if you soak the dates, there should be absolutely no problem and you don’t need a high speed blender to handle it.

vegan caramel- apple cheesecake bars with cinnamon streusel

A delicious vegan turn on a classic cheesecake, that will bring all the fall flavours to your plate thanks to the addition of apples and a cinnamon-streusel topping!

Ingredients

crust

  • 80 g oatflour Oats ground into a fine flour*
  • 1 Tbsp ground almonds
  • 1 Tbsp maple syrup
  • 2 Tbsp plant milk
  • 2 Tbsp cashew butter **

filling

  • 400 g silken tofu
  • 3 Tbs lemonjuice
  • 1 Tsp vanilla extract
  • 1/2 Tsp lemonzest
  • 1/2 Tsp baking powder
  • 30 g vanilla custard powder
  • 100 g pitted dates soaked in hot water for 10+ Minutes
  • 60 g cashewbutter
  • 150 g apple peeled and sliced thinly into halfmoons

streusel

  • 50 g oatflour *
  • 1 heaping Tbsp pecanbutter **
  • 2 Tbsp coconut sugar or fine brown sugar
  • 1-2 Tbsp plant milk
  • 1 1/2 Tsp cinnamon

Instructions

crust

  • Preheat the oven to 200C.
  • Mix together all the ingredients for the crust. The dough will be a bit sticky.
  • Press/spread into a lined loaf tin / small baking form (I creased mine slightly with oil) and bake for 20-25 minutes until slightly golden.

filling

  • Meanwhile, prepare the filling. Add everything EXCEPT the apple to a blender and blend until completely smooth.
  • When the crust is ready, evenly arrange apple slices. Pour the filling over the crust and apples, put back into the oven, reduce the heat to 180C and bake for 30 minutes to get a nice golden-brown colour.

Streusel

  • Mix together all ingredients for the streusel.
  • Sprinkle the streusel on top, increase the temperature to 200C again and bake for another 10 minutes.
  • Let cool COMPLETELY, before taking out of the form. This step is important, as the cake will firm up more and won't fall appart that way!
  • Slice up and ENJOY!

Notes

*Opt for gluten free oats if you need to!
**You can use any other nut/seed butter or (vegan) butter instead!
