Crumbles are such a versatile dessert! You can make them with different fruits, add different spices, make various crumble toppings, eat it hot, eat it cold, eat it with ice cream…or eat it IN FORM OF ice cream!
Even though the weather is getting more and more cold outside, I still enjoy my oatmeal-smoothiebowls and ice cream. I think there’s something about that frozen desserts no one in my family can resist…we‘ve always got a tub of ice cream in the freezer and my dead used to buy these family packages from a certain icecream shop to have a „winter stock“.
I also remember when I was little I would always go for these special flavoured ice creams you find in the frozen section of supermarkets. They were something like “Banana split”, “Black forrest cake” or “Strawberry-baiser”. Now that I like to experiment a bit more in the kitchen myself I try creating the flavours I wish existed. And while I’ve seen apple pie ones I’ve not seen apple crumble ones- at least not where I live 😉
About these popsicles
Well of course they technically don’t taste EXACTLY like apple crumble, but I couldn’t think of a better name or way to describe them. After all they are inspired by the original dessert.
But even with a sweet treat that’s more often enjoyed in the summer, we can get into a festive mood. And these apple crumble protein popsicles do quite a good job in my opinion. Plus they are made with protein powder, in case it’s something that might be important to you.
First we start with a quick stove top „crumble“, then continue with the cinnamon apples that are stewed in the same pan. The vanilla cream base consists of a blend of soaked cashews, protein powder, yoghurt, dates plus a bit of extra vanilla. Most of the flavour of the “cream” layer comes from the protein powder, so make sure you are using one you really like!
A crumble in frozen form, including a vanilla cream AND some additional protein sounds good? BIG YES from me!

Apple crumble protein popsicles
Ingredients
stove top crumble
- 30 g rolled oats
- 10 g puffed amaranth
- 2 Tbsp maple syrup *
- 1 Tsp cinnamon
cinnamon apples
- 1 medium apple choped into very small pieces**
- 1 Tsp cinnamon
"vanilla cream"
- 60 g cashews soaked overnight
- 1/3 Cup (80g) yoghurt I used soy
- 1/3 Cup (80ml) plantmilk I used a cashew milk blend
- 45 g dates pitted and soaked for around 10 minutes in hot water
- 40 g of your favourite vanilla protein powder
- 1 Tsp vanilla extract
Instructions
- Start by dry roasting the puffed amaranth and the oats on medium heat until a little golden. Add the maple syrup and cinnamon and caramelize for about one more minute. Spread onto a piece of parchment paper or a plate to let cool.
- Into the same pan add the apples alongside 2 Tbsp of water and cook on high heat for about a minute. Then mix the cinnamon through, reduce the heat, put a lit onto the pan/pot and let simmer for about 10 minutes until soft. Let cool as well.
- Blend all the ingredients for the "vanilla cream" until the consistency is completely smooth.
- To make the popsicles, add some of the crumble in the top corner of the molds and the apples in the lower corner. Leave a little space inbetween. Cover everything with the vanilla cream, sprinkle the rest of the crumble on top and put into the freezer for 4+hours. Take out of the molds and Enjoy!
