Chocolate and strawberries are truly a match made in heaven. So starting your day with a bowl of this vegan chocolate covered strawberry granola can only be a good morning.
I remember when I was little there was a period where many supermarkets sold these chocolate fountains. We didn’t own one, but many friends did and it was a beloved dessert at outdoor gatherings in the summer.
The most typical fruits to dunk into the chocolate were grapes, bananas and strawberries. Now I think it is not hard to guess which ones were my favorite…
There’s something about the sweetness and slight tanginess of strawberries combined with (preferably super dark) chocolate that is always a delight for the taste buds. Truly a match made in heaven!
ABOUT THIS VEGAN CHOCOLATE COVERED STRAWBERRY GRANOLA
As with most of the other granola recipes you’ll find here, it is sweetened with dates only. Now I know that medjool dates can tend to be a little more expensive BUT you don’t have to use them. You can use any kind of dates you have available. I actually usually save the medjool ones for eating them on their own and go for other more affordable varieties in recipes.
I just need to note here that the base of this granola is not too sweet, which I personally like. In my opinion are the chocolate chunks we will ad at the end perfectly balancing out the sweetness. But we know how much our tastes can vary, so feel free to add some extra maple syrup or any other liquid sweetener to the mixture before baking. I also added this note to the recipe card.
Everything else you will need are:
- oats
- your choice of puffed grains
- cacao powder
- freeze dried strawberries
- vanilla extract
- nutbutter or Tahini
I find that cashew butter creates a really nice taste, but I can imagine that hazelnutbutter could be amazing too. In case you have a nut allergy or you are intolerant, just use any seedbutter you have on hand!
And now your morning bowl is waiting to be filled with some really delicious granola clusters. So get your oven ready! I hope you enjoy my take on a chocolate covered strawberry granola.
ALL THE BEST
Chocolate covered strawberry granola
Ingredients
- 200 g oats
- 50 g puffed grains (such as millet, quinoa, etc.))
- 2 heaped Tbsp (25g) cacao powder
- 150 g dates already pitted*
- 2-3 Tbsp maple syrup (optional, see notes)**
- 2/3 Cups water
- 2 Tbsp (30g) cashew butter ***
- 1 Tsp vanilla extract
- 1/4 Tsp salt
- 20 g freeze dried strawberries
- 50 g dark chocolate chopped, or chocolate chips
Instructions
- Preheat the oven to 200C.
- Into a large mixing bowl add the oats, puffed grains, cacao powder and salt.
- In a blender blend the dates, water and vanilla extract until completely smooth.
- Add the date mixture to the dry ingriedents and mix until well combined. Spread the mixture out onto a lined baking tray and bake for around 20-25 minutes. Check every few minutes to make sure it doesn't burn. Halfway through baking, start tearing it into pieces using a long wooden spoon.
- Let cool completely. Break down still too large clusters into smaller ones. Then mix through the freeze dried strawberries and chocolate and store in an airtight container. Enjoy!
