Chocolate covered strawberry granola

This granola combines the tanginess of freeze dried starwberries with the indulgent taste of dark chocolate. It is vegan as well as it can be made gluten free and nut free.

Ingredients

  • 200 g oats
  • 50 g puffed grains (such as millet, quinoa, etc.))
  • 2 heaped Tbsp (25g) cacao powder
  • 150 g dates already pitted*
  • 2-3 Tbsp maple syrup (optional, see notes)**
  • 2/3 Cups water
  • 2 Tbsp (30g) cashew butter ***
  • 1 Tsp vanilla extract
  • 1/4 Tsp salt
  • 20 g freeze dried strawberries
  • 50 g dark chocolate chopped, or chocolate chips

Instructions

  • Preheat the oven to 200C.
  • Into a large mixing bowl add the oats, puffed grains, cacao powder and salt.
  • In a blender blend the dates, water and vanilla extract until completely smooth.
  • Add the date mixture to the dry ingriedents and mix until well combined. Spread the mixture out onto a lined baking tray and bake for around 20-25 minutes. Check every few minutes to make sure it doesn't burn. Halfway through baking, start tearing it into pieces using a long wooden spoon.
  • Let cool completely. Break down still too large clusters into smaller ones. Then mix through the freeze dried strawberries and chocolate and store in an airtight container. Enjoy!

Notes

*You can use any type of dates you have available.
**The base of this granola is not too sweet, which I personally like. I fond that the chocolate makes up for it perfectly, but our tastes can vary so much, so feel free to add some maple syrup or other liquid sweetener!
***substitute with any other nut- (I suggest hazelnut) or seed butter
