This creamy avocado and pea toast is a real go-to lunch or dinner. As much as spending time in the kitchen is fun (at least for me!), I am also a big fan of simple meals

Let’s be honest- sometimes we don’t want to spent hours cooking or life happens and we have other things to do. However simple doesn’t mean it has to be less nourishing anf can be as good for our body. And our taste buds. This creamy avocado and pea toast combines both: it’s simple and quick yet tasty and satisfying.

In my opinion toast always hits the spot. I think for me it’s the different textures- crunchy bread meets some kind of topping like hummus and veggies, cream cheese, tomato chickpeas…the variations are endless. And in this case, toast meets a creamy spread made of avocados and peas.

The peas do not only add some protein and make it more filling, they also contribute to creamy texture. Plus they bring along a slightly sweet taste that balances out the whole flavour well.

Apart from some avocado and peas, all you need is fresh or frozen basil, dried oregano, lemon juice, garlic and mustard. If you preferr you might also add a bit of nutritional yeast for a touch more savorines. But it will be just as good without.

The avocado and pea spread could also be served as dip or as part of a nourishing bowl. Or in form of a sandwich to enjoy when you’re out and about. In whatever way, I can assure you it will be delicious.

Creamy avocado and pea toast

This creamy avocado and pea toast is a real quick go-to lunch or dinner. It's a nourishing and satisfying meal made in nearly no time. Plus its vegan and you can make it gluten free by choosing a gluten free bread!

Servings 1 person

Ingredients

  • 1/2 medium to large avocado *
  • 1 cup (150g) frozen peas
  • 2 heaped Tbsp basil fresh or frozen
  • 1 Tbsp lemon juice
  • 1 small garlic clove
  • 1 Tsp dried oregano
  • 1 heaped Tsp dijon mustard
  • 1 Tsp onion powder
  • 4-6 Tbsp water more as needed
  • salt and pepper to taste
  • 2 slices favourite bread/ toast

Instructions

  • Put the peas into a bowl andpur some boiling water over them. let everything stand for about 10 minutes.
  • Next, drain the peas and add 3/4 of them to a blender alongside the other ingredients for the spread. Blend until smooth, season with salt and pepper, then mix in the rest of the peas with a spoon (don't blend, they should stay whole).
  • Toast your bread/ toast, spread the avocado and pea mixture on top and serve with some fresh herbs, arugula and chili flakes if you like. Enjoy!

Notes

* Make sure your avocado is ripe. othersise it will leave you with a rather bitter taste which is not so pleasant.
