Tiramisu overnight oats (vegan, gluten free)

Having Tiramisu, the beloved italian dessert, for breakfast sounds like a dream, right? Well, of course you could eat actual Tiramisu for breakfast- BUT you could also get all the ingredients and whip up these Tiramisu overnight oats.

I like to start every morning with a nourishing breakfast. However I love trying out different creations to make it more fun and interesting. Making something Tiramisu-inspired has been on my mind for quite a while now. And I finally nudged myself to give it a go. Let me tell you, it definitely was worth it!

About these tiramisu overnight oats

In case you didn’t know this before: “Tiramisu” means “lift me up”. And knowing that these overnight oats are waiting in the fridge is a motivation to get out of bed for sure!

All it takes to make these are a few simple ingredients and minimal time& effort. You probably already have all the things on hand: oats, (plant) yoghurt, (vegan) cream cheese, chia seeds, raw caco powder, vanilla protein and dates or any kind of sweetener. To enhance a “tiramisu-like” flavour I would suggest to add a few drops of rum essence or flavour. But that’s totally optional and they will still taste delicious!

Tiramisu overnight oats (vegan, gluten free option)

Tiramisu is italian and means "lift me up"- and I can promise you these overnight oats will definitely lift you out of bed knowing that they're waiting for you in the fridge! They are vegan and can be made gluten free.

Ingredients

base

  • 1/2 cup rolled oats *
  • 1 cup (plant) yoghurt (I used a natural soy one, but you could also go for a vanilla variety!)
  • 1/3 cup (80ml) boiling water

vanilla layer

  • 2 tbsp (vegan) cream cheese or mascarpone (I used a homemade cashew one)
  • 1 tsp vanilla extract *
  • 1-2 Tbsp (plant) vanilla protein powder (optional, see notes)**
  • 2/3 of the base

coffe-chocolate layer

  • rest (1/3) of the base
  • 2 medjool dates ***
  • 1/2-1 Tbsp raw chocolate powder (optional)
  • 1 Tbsp chia seeds
  • 3 Tbsp strong brewed coffee or espresso

Instructions

  • In a bowl pour the boiling water over the oats and let them soak for 10 minutes.
  • Then add the yoghurt and mix until well combined.
  • Spoon out about 1/3 of the mixture and add it to a blender alongside the dates, chia seeds, coffe and cacao powder if using and blend until smooth.
  • Mix the remaining 2/3 with the vanilla extract, cream cheese and protein powder if using.
  • Layer both bases in a tall jar or glas and leave in the fridge overnight. In the morning dust the top with a bit more cacao powder and enjoy!

Notes

*If you cannot tolerate gluten, use gluten free oats.
**substitute with 1/4 Tsp vanilla
***You can substitute the protein powder for 1 tbsp sweetener of choice (maple syrup, etc.) I find the tiramisu oats to be sweet enough with just the protein powder, however you could add more sweetness if you want.
****use around 1-2 Tbsp date/ maple syrup instead.
*****You could also add a few drops of rum essence/flavour to make it more tiramisu-like!
