Tiramisu is italian and means "lift me up"- and I can promise you these overnight oats will definitely lift you out of bed knowing that they're waiting for you in the fridge! They are vegan and can be made gluten free.

Ingredients
base
1/2cuprolled oats*
1cup(plant) yoghurt(I used a natural soy one, but you could also go for a vanilla variety!)
1/3cup (80ml)boiling water
vanilla layer
2tbsp(vegan) cream cheese or mascarpone(I used a homemade cashew one)
1tspvanilla extract*
1-2Tbsp(plant) vanilla protein powder(optional, see notes)**
2/3of the base
coffe-chocolate layer
rest (1/3)of the base
2medjool dates***
1/2-1Tbspraw chocolate powder(optional)
1Tbspchia seeds
3Tbspstrong brewed coffee or espresso
Instructions
In a bowl pour the boiling water over the oats and let them soak for 10 minutes.
Then add the yoghurt and mix until well combined.
Spoon out about 1/3 of the mixture and add it to a blender alongside the dates, chia seeds, coffe and cacao powder if using and blend until smooth.
Mix the remaining 2/3 with the vanilla extract, cream cheese and protein powder if using.
Layer both bases in a tall jar or glas and leave in the fridge overnight. In the morning dust the top with a bit more cacao powder and enjoy!
Notes
*If you cannot tolerate gluten, use gluten free oats.**substitute with 1/4 Tsp vanilla***You can substitute the protein powder for 1 tbsp sweetener of choice (maple syrup, etc.) I find the tiramisu oats to be sweet enough with just the protein powder, however you could add more sweetness if you want.****use around 1-2 Tbsp date/ maple syrup instead.*****You could also add a few drops of rum essence/flavour to make it more tiramisu-like!
