VEGAN BAKED CINNAMON RAISIN DONUTS

I’m currently *trying* to make a sourdough starter…yet somehow it just doesn’t want to get bubbly and all I’m left with is lots and lots of discard. So I thought I search for recipes, that call for sourdough discard and already had an exact idea about what flavour it should have: cinnamon raisin. And they should be donuts.

However, do you know that situation when you search for something specific, being convinced that you had already seen it before but can’t find anything when you actually need it? And what do you do if you cant find a specific recipe? Right. You search for some inspiration and just experiment! That’s the history of these little donut friends.

ABOUT THESE DONUTS

Well, as you could already guess from the title, they are cinnamon-raisin flavoured- a combination that truly never gets old! Kind of as classic as blueberry muffin. It always makes me remember all those summerholidays my family and me spent in the United States and I instantly get wishful to go back there soon.

These could be seen as kind of more “wholesome” variety: depending on what type of flour you used for the starter, they are gluten free as I made them with oat flour. AND they are oilfree as well as refined sugar free if you decide to go with the date sugar option, but you can use normal brown sugar instead for a cheaper variety- they will still be healthy and (most important) delicious!

vegan baked cinnamon raisin donuts

These easy vegan baked donuts are the perfect opportunity to use up your sourdough discard. depending on which type of flour your starter is made of they also happen to be vegan, gluten free, oil free and refined sugar free!

Ingredients

wet ingredients

  • 180 g sourdough discard *
  • 110 g apple sauce
  • 1/4 cup (60 ml) plant milk I used almond
  • 1 tsp vanilla extract

dry ingredients

  • 125 g oat flour
  • 55 g date sugar (or brown/ coconut sugar)
  • 100 g raisins
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 1/2 heaped tsp cinnamon
  • 2 Tbsp (30g) almondflour or (vegan) butter

Instructions

  • Preheat oven to 200 C.
  • In a large bowl mix together sourdough discard, plant milk, apple sauce, vanilla extract, sugar, almond butter and cinnamon.
  • To a smaller bowl add the flour, baking soda and baking powder and give it a good mix as well. Then add to the larger bowl and give it a good stir until everything is well incorporated.
  • Fold in the raisins and let rest for 10 minutes.
  • In the meanwhile prepare a donut baking tin by creasing it with a little bit of oil/ butter. When the dough is ready, devide equally between the forms. Depending on how big or small your tray is, you`ll get around 8-10 donuts.
  • Bake for 10-15 Minutes. Let cool and Enjoy! Smear on some nut butter/ (vegan) butter, cream cheese...whatever you fancy!

Notes

*Don’t worry if you have no sourdough discard. You can swap it with a mixture of half yoghurt- half more oat flour (90g yogurt, 90g oatflour.) The batter doesn’t need to rest then, otherwise it will get a bit too firm.
