Soak dates for at least 1 hour in warm water.
Roast nuts at 200C in the oven for 10-15 minutes until golden. Let cool.
In a blender or food processor process oats until a fine flour forms. Set aside.
Blend cacao nibs as well, they should be finer but still a bit chunky. Set aside as well.
In a food processor process nuts until they form a paste (not runny as nut butter). Add dates and process again until smooth.
Finally add oat flour, coconut flour, cacao powder, ground flaxseeds, hempseeds (and vanilla extract if using) and blend again until it gets a dough like concistency.
Roll the dough into balls, let cool down in the freezer for about 30 minutes and enjoy!
