Chai and orange baked apples with maple-cashew cream

These baked apples are a spooky, fruity twist on the classic. Served with maple-cashew cream they make a perfect Halloween dessert!

Ingredients

filling

  • 4 apples I used Gala
  • 100 g of the hollowed out apple flesh
  • 35 g raisins
  • 15 g cranberries
  • 2 Tbsp (16g) ground almonds
  • 2 Tbsp (20g) crushed Walnuts
  • 1/3 Cup (80ml) orange juice
  • 1/4 Tsp orangezest
  • 1 1/2 Tsp ginger
  • 1 Tsp cinnamon
  • 1/2 Tsp cardamom
  • 1/2 Tsp allspice
  • 1/2 Tsp nutmeg
  • 1/2 Tsp ground clove

cashew maple cream*

  • 1 Tbsp Maple syrup
  • 60 g raw cahews
  • 1 Tsp vanilla extract
  • pinch of salt

Instructions

for the apples

  • Cut off the top of the apples and scoop out the inside, making sure, that you don't pierce through. Kepp the apple flesh for the filling. using a knife, carve faces into each apple.
  • Fill each apple with the mixture, place their tops back again and add them into a baking dish or on a baking tray lined with parchment paper. Turn temperature down to 180C and bake for 35-40 minutes until the apples are soft.
  • Preheat the oven to 200C. Then make the filling by cutting 100g of the apple flesh very thinly before you mix them together with the orange juice, spices and dried fruit.

maple cashew cream

  • Add all ingredients to blender and blend until smooth. If the texture is too thick, thin it out to your liking by adding a bit more water.
  • When apples are ready, divide the cream between four plates, add an apple to each and sprinkle with some cinnamon if desired. Enjoy!
