Combined with a cup of hot coffee or tea, this Pumpkin Spice and plum bread is a match made in heaven. And you will be surprised by the fudgy texture, despite containig no oil or butter.
Start by making the flaxsee egg: mix ground flaxseeds with about 5 Tablespoons of water (75g) and let sit for about 10 minutes.
Preheat the oven to 200 C.
In a bowl combine the dry ingredients. To a sepparate bowl add the wet ingredients and stir until completely smooth. Mix in the flaxseed-water mixture, then sieve in the dry ingredients as well and give it another good mix until no clumps remain.
Slightly grease a loaf pan with a bit of oil/margarine. Pour the batter into the pan, top with plum halves and put into the oven.
Bake for about 45-50 minutes until the top is golden. Let cool completely before slicing (important!). Enjoy!!!
