Fudgy Pumpkin Spice and Plum Bread

Combined with a cup of hot coffee or tea, this Pumpkin Spice and plum bread is a match made in heaven. And you will be surprised by the fudgy texture, despite containig no oil or butter.

Ingredients

wet ingredients

  • 240 g apple sauce
  • 220 g pumpkin pureè (I used butternut)
  • 120 g date syrup
  • 50 g date sugar
  • 15 g pumpkin spice
  • pinch of salt

dry ingredients

  • 125 g all-purpose flour
  • 125 g spelt flour
  • 1/2 Tsp baking powder
  • 1/2 Tsp baking soda

flaxseed "egg"

  • 2 Tbsp (16g) ground flaxseeds
  • 3 plums destoned and cut in half

Instructions

  • Start by making the flaxsee egg: mix ground flaxseeds with about 5 Tablespoons of water (75g) and let sit for about 10 minutes.
  • Preheat the oven to 200 C.
  • In a bowl combine the dry ingredients. To a sepparate bowl add the wet ingredients and stir until completely smooth. Mix in the flaxseed-water mixture, then sieve in the dry ingredients as well and give it another good mix until no clumps remain.
  • Slightly grease a loaf pan with a bit of oil/margarine. Pour the batter into the pan, top with plum halves and put into the oven.
  • Bake for about 45-50 minutes until the top is golden. Let cool completely before slicing (important!). Enjoy!!!

*use maple syrup, agave nectar or honey instead
**can be substituted with brown or coconut sugar
