Course Main Dish
Keyword breakfast, french toast, mains, vegan
Servings 1 serving

Ingredients

  • 2 slices of your favourite bread/ toast (I used sourdough)
  • 2 slices pineapple (fresh or from a can, preferably in its own juice)
  • 2 slices (dairyfree) cheese

vegan version*

  • 120 g silken tofu
  • 1/4 cup (60ml) plantmilk (I used soy)
  • 1 Tbsp (15g) chickpea flour
  • 1/2 Tsp garlic powder
  • 1/2 Tsp onion powder
  • 1/2 Tbsp nutritional yeast
  • pinch of turmeric (optional, for colour)
  • pinch of black pepper (optional, but reccomende if you use the turmeric, for enhanced extraction of the curcumin)
  • salt to taste

vegetarian version

  • 2 (organic, pasture rasied) eggs
  • pinch of garlic powder
  • 2-3 Tbsp plantmilk

Instructions

  • In a shallow bowl, mix ingredients for the the french toast batter together until well combined. Dip in bread slices and fry each slice on both sides in a non-stick pan until golden.
  • Place one pineapple slice on each piece of bread. Top with cheese slices and bake in the oven at 200C for 5-10 minutes until the cheese is melted. You can also use the grillsetting, but then you should cut down the time to 3-5 minutes to make sure nothing gets burned (and DON'T use baking paper, as you might set your oven on fire).
  • Garnish with herbs such as coriander or chieves and serve with your favourite dipping sauce or on it's own. Enjoy!

Notes

*the batter on its own doesn't taste so delightful, but it changes once its cooked!
