Yoghurt orange banana bread (vegan& nut free)

You can never go wrong with a loaf of banana bread! This one is infused with orange flavour, made with simple ingredients and tastes delicious for breakfast or as snack. It's vegan and nut free.

Ingredients

wet ingredients

  • 1 Cup (240g) plant yoghurt (I used an almond based one)*
  • 1 Cup (240g) banana mashed
  • 1 Tsp vanilla extract
  • 2 1/2 Tbsp freshly squeezed orange juice

dry ingredients

  • 2 heaped Tbsp (16g) flaxseeds
  • zest of 1 orange
  • 2 heaped Tbsp (30-40g) coconut sugar
  • 200 g flour **
  • 50 g coconut flour
  • 1 Tsp baking powder
  • 1/4 Tsp baking soda
  • 1/4 Tsp salt

glaze

  • 80 g (vegan) cream cheese
  • 2-3 Tbsp maple syrup
  • 2-3 Tbsp plant milk
  • 2-3 Tbsp orange juice
  • 1/3 Tsp orange zest
  • 1/2 orange finely sliced for decoration, optional
  • pinch of salt

Instructions

  • Mix flaxseeds with 3 Tbsp water and let sit for about 10 min.
  • Preheat oven to 180C.
  • In a bowl combine all the wet ingredients. Mix together the dry ingredients (except the orange half) in a sepparate bowl, then add the wet mixture and stir everything together until completely smooth.
  • Line a baking tin/ bread loaf tin with parchment paper and grease with a little oil/ vegan butter. Spread the batter envenly into the prepared form.
  • Bake everything in the oven for 40-50 minutes. Check every once in a while to make sure the top doesn't get burned and rotate it if necessary. When ready baked, remove the tin from the oven and let cool completely before flipping it over to release the banana bread.
  • Mix together all the ingredients for the glaze in a glas/jar. Drizzle over the banana bread, decorate with the orange if using, slice up and ENJOY!

Notes

*feel free to substitute a bit of the yoghurt (around 2 heaped Tbsp)for cashew-, almond (or vegan)butter to make it even more fudgy!
**Any wheat or spelt flour will work: regular, wholegrain, etc. I haven't tried it with a store-bought gluten free flour mix or a homemade one, so I cannot assure you that it will turn out fine as well!
